Simple examples of data that's better stored in a document-oriented database than a relational database are difficult to find. Here's one, maybe: purchase orders, where the bulk of the data in a document is purchase detail line items that might be anything from any vendor. The data is structured, but it's not useful to have a po_item_types table (since the items are so disparate, and details like current price might vary even from a single vendor over time).
