Summer Pasta
From Shelterrific.
- Half cup olive oil
- Chopped garlic
- Shredded basil leaves
- Tomatoes
- Rigatoni
- Mozzarella
- Combine olive oil, chopped garlic, and shredded basil leaves in large bowl. Let sit for 6-8 hours.
- Two hours before serving, add chopped tomatoes.
- Cook pasta just before serving. While pasta cooks, chop mozzarella. Taking mozzarella directly from fridge will help reduce clumping.
- Drain pasta, then mix-in mozzarella.
- Mix all ingredients, and serve.
