So, a big advantage of NoSQL that I hadn't fully understood is that you can scale them infinitely horizontally, keeping all the data in memory.
This is possible because the NoSQL databases operate fundamentally as key values stores where the keys and values can be anything, like JSON documents.
The NoSQL database hashes the keys and uses those hashes as a sequential index.
Indexed items can then be split across horizontal servers, with each server storing a known range of keys.
